Bulgar Wheat Salad

I made this salad twice this week. It's so healthy, filling and yummy.

Bulgar Wheat Salad
1 c. Bulgar Wheat (available in the bulk section of my local Winco)
1 3/4 cup. Boiling water
1 tsp. Salt
4T fresh lemon, lime, or orange juice (or combo)
2T Olive Oil
1t. salt
any combination of the following
sliced grapes, diced apples or orange segments
chopped almonds, walnuts or pecans
1 whole avocado, chopped
2 ribs of celery, sliced
chicken breast, diced
marinated tofu, cubed
feta cheese, crumbled
Add boiling water to the bulgar wheat and salt and allow sit in a covered pan for 30 minutes. Whisk citrus juice with olive oil and salt and then stir in your choice of ingredients listed above. When the bulgar is soft stir in in with the rest of the salad. Enjoy!

  1. Sounds delcious! We have a cous cous salad that is slightly similar that we make way too frequently! I might branch out and try this instead.

  3. Yum! I have a similar recipe for a cous cous salad but I've never tried bulgar wheat! I'll have to give it a try...it looks yummy!

  4. Oh my goodness -- how strange. I made a dish with bulgar wheat this weekend (it was a chili-type casserole). We loved it -- and I have a huge box of bulgar left and wondered what to do with it. I'm definitely gonna give this a try. It looks delicious - and totally different than my chili-esque dish.
