Keep me in the craftroom casserole series vol. 3

This casserole holds many childhood memories for me. I remember loving it every time my Mom made if for us, and begging for it when she made lentil soup instead. There's just something about tater tots that makes my heart happy.

We went to my brother's house for the Super Bowl and this is what I took with me. It's no Brownie Pop, but it was gone by the end of the night. It's a crowd and a kid pleaser for sure!

Tater Tot CasseroleIngredients:

1 lg. package tater tots
1.5 cups cut corn
1.5 cups green beans cut into small pieces
1 cup diced carrots
(or I use peas, but I have beans in the freezer from this summer so that's what I used)
1 pound ground beef
1 can cream of mushroom soup (I used cream soup substitute)

Instructions:

1. Preheat oven to 350 degrees
2. Brown ground beef and then add vegetables and cook until defrosted
3.Add cream soup and stir until blended
4. Pour mixture into 9x13 pan
5. Layer tater tots over the entire top of the casserole
6. Bake the casserole for the amount of time the tater tots package suggests or 35-45 min.

  4. Haha. I forgot about this casserole! My Mom never made it that I can remember, but I remember having it other places and liking it. Too bad I just got back from the grocery store! Next time!

  7. I know it is time for the Tater Tot dish to enter my life. Oddly enough, Tater Tot Hot Dish (as it is said in Minnesota) is probably like a minivan. You don't want it in your life, until you have it, then you can't imagine your life without it.
