The power of One
When I read Barbara Kingsolver's book Animal, Vegetable, Miracle the first time there were many things she discussed that struck me as profoundly unbelievable. I've seen this statistic on a few other blogs lately, so I almost didn't post it here. But really, it fits perfectly with our Go Local challenge, so I couldn't resist (thanks for reminding me, Sara K.).
The power of one is really powerful when you think about it. So take heart in knowing that even if you only come up with one local meal all summer, you've made a difference.
If every US citizen ate just one meal a week (any meal) composed of locally and organically raised meats and produce, we would reduce our country's oil consumption by over 1.1 million barrels of oil every week.
