Seriously Good

I love this magazine, and I always have. Every time I get one I find something I have to make again and again. Like the thing I made today: Warm Spinach Salad with Fried Egg and Potatoes. I can tell you without a doubt that I will make this again. And again. And even again. Because it's fast, healthy, and freaking good. And I should have capitalized that. Everyone in the house loved it.

Here's how you can freak out too:

Warm Spinach Salad with Fried Egg and Potatoes

4T Olive Oil
2 Baking potatoes
course salt and ground pepper
2 T red wine vinegar (or any vinegar)
1T dijon
1 shallot, minced (Who has these? Not me. We didn't use one.)
2 bunches of flat leaf spinach (or a whole lot of it) roughly torn
2 ounces Parmesan cheese (Hadley's handful size)
4 large eggs

Dice the potatoes and brown them in 2 T oil. 12-14 min.

In the mean time get out a large bowl and mix your dressing (s&p, vinegar, Dijon, shallots (or not), and 2 T oil. Then add your spinach and Parmesan, but don't mix it up.

When potatoes are done dump them in with the spinach and mix everything together until the spinach wilts and the dressing is all mixed with greens and potatoes.

Cook your 4 eggs over easy (or if you're like me..break a few yolks and don't worry about it).

Plate the salad and place the egg on top.

Freak out! Cause' it's going to be really yummy. It's great for leftovers, too. I had it for lunch and again for dinner.
